It’s that time of year again when holiday parties, potlucks and get-togethers fill our calendars. Invitations to parties come in like a storm, and as awesome as parties are, each invitation comes with fine print: “please bring a side dish” or “it’s potluck style!” Between the parties, holiday shopping, work, and the inevitable sniffles, who has time to come up with (and make!) delicious recipes? Not me, that’s for sure!

Today I want to share some recipes that aren’t just super easy to make, but are also delicious and guaranteed to please. So whether you are looking for something to bring to an office holiday party or your Grandma’s house for Christmas, you’ll find the perfect dish below. Read on!

Garbanzo Stuffed Mini Peppers

These garbanzo stuffed mini peppers are honestly the easiest things to make. With only six ingredients in the recipe, this dish isn’t only super simple, but inexpensive too! Plus, they’re healthy (which is always a good thing during the holidays!). Bite size is a must when bringing a dish to a party so guests can eat them with ease. Hot tip: for an even easier recipe, you can buy store bought hummus when you pick up the mini peppers (Trader Joe’s has them by the bagful) and stuff them with that instead. Top with a little cilantro and you’re all set! Easy (chick)peezy.

Hot Spinach Apple Salad

Um, yum. Hosts and hostesses usually take care of the main dishes, so the last thing they want to do is make a salad. Enter you with this amazing, delicious hot spinach apple salad. Again, this recipe calls for only six ingredients, and that includes the dressing too! The tangy dressing adds the perfect flavor, the apples add sweet crunch and the bacon does exactly what bacon does — makes it amazing. You may want to double the recipe because this dish will go fast!

Caprese Salad Kabobs

Caprese salad is always a hit at parties and these kabob style bites make them even more enjoyable. (Who doesn’t love eating finger foods?) Wildly easy to make and inexpensive, this dish is a modern take on the boring ‘ol veggie platter. And if you have kids, they’ll love helping you make this recipe!

Tangy Glazed Meatballs

No potluck is complete without meatballs. Re-reading that sentence makes me giggle, but it’s true, am I right? Anyway, these meatballs are the perfect balance between spicy and sweet. Plus your gluten-free and Whole 30 friends will thank you for looking out for them! This recipe calls for pre-made meatballs (again, Trader Joe’s for the win!) but if you feel called to make them from scratch, feel free! And if you want the sauce to be more spicy than sweet, just add more hot sauce. Just don’t forget the tooth picks — no one wants to see anyone pick up a meatball with their hands. 😉

Easy Cake Mix Bars

This recipe is for the bakers out there who love bringing dessert to a potluck. This easy recipe is a huge hit at offices, parties, and potlucks alike because they are so yummy and simple to make. If you aren’t a fan of vanilla, try substituting it for chocolate cake mix and caramel chips instead of jimmies!
